Simple Supper: Pimp your Pasta
Today's Simple Supper is really several ways to ramp up the flavour in a bit of a cheat's dinner - shop bought filled pasta. I've got a bit of a weakness for this (it's my go to meal whenever I'm home alone) and love adding a few treat-y extras to make it even more delish. It would be hard for this to be easier so next time you're in need of a no-brain, no-fuss, one pan-er why not give one of these combos a go...
Treat Tortellini
Serves: 2, or 1 greedy person
Prep Time: 5 mins
Cook Time: 4 mins
Ingredients
1 250g pack of filled pasta - Waitrose has a good range of tasty options
Olive Oil
2 cloves garlic, finely chopped
Selection of ingredients to pimp your pasta - see my combination examples below or make up your own!#
Knob of butter
Parmesan cheese to grate on top
Chopped fresh herbs - parsley, basil or oregano all work well
Boil the kettle
While you are waiting for the kettle to boil, prepare your chosen ingredients. Put your pasta into a large saucepan and fill it with the boiling water, adding a good pinch of salt. Bring back to the boil and simmer for 2-3 minutes until the pasta is tender. Drain your pasta and put the pan back on the heat with a glug of olive oil. Fry your garlic and any other ingredients that need a brief sizzle, then tip the pasta back in along with any other ingredients. Toss together for a minute or so until everything is thoroughly combined, finish with a knob of butter melted through then serve in warm bowls, sprinkled with Parmesan and some chopped fresh herbs.

Goats Cheese and Pesto Tortelloni with pine nuts, sunblush tomatoes and basil
Pumpkin and Pine Nut Fiorelli with fried pancetta, chilli and parsley
Mushroom Ravioli with fried shallots, a splash of white wine, a spoonful of creme fraiche and tarragon
Any seafood Ravioli capers, lemon juice and fresh rocket on top
Spinach and Ricotta Tortellini with chilli, anchovies and green olives
